Sharon Kleyne, host of the Sharon Kleyne Hour Power of Water syndicated radio talk show, recently interviewed GT Dave of Synergy Kombucha about kombucha, tea, nutrition, water and probiotic flora. Sharon Kleyne asked GT Dave ("GT" stands for "George Thomas") how he became interested in kombucha. He explained that his parents were vegetarians interested in natural foods and spirituality. They discovered kombucha when he was 13.

Dave's mother developed breast cancer when he was 15 and kombucha appeared to help. She began studying the nutritional value of kombucha, which is believed to detoxify the body and improve beneficial digestive bacteria ("probiotics"). Doctors are now becoming more interested in the nutritional value of kombucha.

Kombucha, according to Dave, is a cultured, fermented tea, much like beer or yogurt. Sharon Kleyne noted that like other teas, kombucha is good way to drink water because there is more water and fewer artificial ingredients or sugars than in juices, coffee or soda.

Some commercial kombucha products are pasteurized, which Dave questions because pasteurization is a sterilization process and many bacteria generated in the brewing process are beneficial to humans. Lactobacillus acidophilus is a probiotic stomach bacteria used to make yogurt and E coli is a beneficial intestinal bacteria (although some strains can make you ill).

Sharon Kleyne asked about the brewing process. Dave replied that Synergy Kombucha is brewed using extremely safe and sanitary methods. Dave encourages home brewing, which he says is "fun and spiritual," but cautions to follow directions carefully and be as clean and meticulous as possible. Brewing at Synergy Kombucha takes about 30 days. Organic green and black teas are used (which both come from the same plant; Camilla sinese). The tea undergoes a chemical metamorphosis during brewing and fermentation that removes the caffeine and completely changes the tea's nutritional components.

Brewing kombucha requires some UV lighting and oxygen. The room should be fairly warm and filled with "positive energy."

Kombucha is described as "fiizzy" an d"tangy" and some people find it very tasty, although others do not.

Synergy Kombucha products contain 95% kombucha and 5% fruit juice. There are 23 flavors, many of which are beneficial, such as "Ginger." Other kombucha brands may be moer strongly flavored but Dave does not want to mask the natural flavor.

Regarding the history of kombucha, the drink has been known since 221 BC, not long after the discovery of tea. Dave believes that the first kombucha was brewed in China, although it is now considered a Russian drink. Kombucha was first brought to Europe by Dutch traders. The word "kombucha" is Japanese and the drink is also historically popular in Germany. When kombucha was introduced in Europe, water quality was very bad and people substituted beer or wine, which was safer but tended to get everybody drunk. Kombucha was safe to drink and didn't get you drunk.
